Europe is a great place for this. There are tons of little towns and farms ready and more than equipped to accommodate you. I went on a rural vacation, by chance, a few years ago in Italy. It's really great because you can check out the touristy cities if you want, and then take a few days to rest in the countryside, and experience another, more natural side of Europe. Great to recharge.

I agree with "journeyman", Europe is perfect for that. Having lived in 3 different countries in the continent and travelled also a bit around Europe, there is innumerous number of accommodation facilities around here.
Currently am based in Portugal and let me tell you, it is probably the most traditional, or at least one of the most traditional countries in Europe. It's so easy to find a place in the countryside.
Based on my own experience you can practice rural tourism anywhere in the world. My favourite is South America.
